DEGLI ULIVI, LE MAT DU RAISIN ROSSO 2020

The red wine Le Mat du Raisin from the Cascina degli Ulivi winery is produced with a blend of two different varieties of red grapes. Stefano Bellotti, son of winemakers and pioneer of organic and biodynamic agriculture in Italy, took over the reins of the family business around the end of the 70s, immediately dedicating himself to collaborating with some of the big names in the Italian wine world to turn his very personal vision of winery and wine production into reality. Located in the Alto Monferrato, Cascina degli Ulivi has more than 22 hectares of land facing mainly south and cultivated with the guyot system. Among the very first winemakers to embrace this philosophy, Stefano and his daughter Alice – who currently manages the company – pamper the vines with minimally invasive interventions that do not involve any use of chemicals or mechanical and technological supports, leaving maximum freedom of expression to the plants and their fruits. Le Mat du Raisin is a red wine obtained from the meeting of two different varieties of red grapes, both from vines at least 60 years old. Almost all the bunches are destemmed and, after about 7 days of maceration in contact with the skins, spontaneous fermentation is carried out by indigenous yeasts  without temperature control inside large oak barrels. Before being bottled, the wine ages in the same containers for about a year. This red wine, also known as "U Guaiu", has an impenetrable ruby red color with garnet hues. On the nose, fruity and juicy notes of blueberries, blackberries and cherries stand out, accompanied by spicy puffs. The sip is crisp, long and persistent; A decidedly easy-drinking wine. Le Mat Du Raisin goes perfectly with red meat and game dishes. Also excellent as an accompaniment to rich platters of cured meats and medium-aged cheeses.
